Brewery Matuška is located in Broumy village, which lies in the protected landscape area Křivoklátsko. The brewery was established on April 13, 2009, on Easter Monday. That day the first batch of a special dark beer was brewed. It took two years to put this micro-brewery together. The brewery was founded by Martin Matuška, a brewer since 1981. He was able to do it only thanks to the moral and financial support of his whole family. And also knowing that his son, Adam, would carry on the family brewing tradition. Beer is brewed crafted, unfiltered and unpasteurized.
Top fermenting is the oldest process where the beer ferments at temperatures of around 20°C, and the yeast go to rest at the top of the wort. Beer produced this way have a „flowery“ flavor. It’s the way Ales, Weizens and Stouts are made.
Bottom fermenting is a technique that became most widely used from the mid 19th century. Beers ferment at temperatures of no more than 12°C, and the yeasts drop to the bottom of the fermenters. Beer produced this way are less „flowery“. It‘s the way Pilsners and other lagers are made.
